This is your opportunity to experience 18th century foodways and tavern culture first hand! "Apprentice" in the kitchen or the brewery and be a part of the preparation of all the elements of an authentic winter meal, including beverages. At the end of the afternoon, join fellow participants and instructors for a fine meal to share the fruits of your labor.

Apprentices will have hands-on experience in the location of their choice and plenty of time to enjoy moving between the brewery and the kitchen to gain a broad understanding of early American foodways. Light snacks and samples served throughout the day (BYO lunch if you like) with a full meal provided at the end of the afternoon. All receive a booklet containing recipes and information on 18th century dining and tavern traditions, including our special tradition of sharing toasts around the table at this event.

A guided tour and weapons demonstration round out the day.

Participants should wear work clothes of primarily natural fibers, thick soled shoes and bring an apron and leather work gloves if you have them. Brewing and cooking in the historical manner require heavy lifting and working adjacent to the fire.

NEW this year! This event will function as a "living history laboratory" for a team from Pennsylvania State University transcribing, translating, and interpreting the Barclay manuscripts -- a collection of 18th century recipes, medicine, and other day-in-the-life dairies. We will attempt to reproduce some of these "receipts" as a way to validate the transcriptions. Be a part of this exciting hisorical research!
